Jackrabbit Brewing Company is a growing production brewery and taproom located in West Sacramento, California. Founded in 2013 we share a passion for full-flavored yet balanced beers, we have become a staple in the booming food and beer scene in the central valley and Bay Area. Taking inspiration from Belgian, English and German beer, our goal is to craft beer that is founded in tradition, but often defies convention with California-style inventiveness. We currently operate a 2 vessel, 15bbl ProBrew brewhouse with a 40bbl HLT, 4 - 15bbl fermenters, 7 - 30bbl fermenters and 1 - 60bbl fermenter. Current annual production ~2,500bbl with a capacity for 5,500bbl.
Job Summary:
Reporting to the Operations Director, the Head Brewer will be responsible for production from grain to glass including scheduling, ingredient/material ordering, brewhouse/cellar management, new recipe formulation and record keeping using Ekos. They will be responsible for managing a three-person team while communicating and collaborating with the sales, marketing, and taproom departments.
Job Requirements:
4+ years of production brewing experience with increasing responsibility
1+ year of management within a production brewery
High level of understanding of safe brewing practices and brewery safety with the desire to champion these practices within the brewery
Brewing degree or certificate is highly desirable
Impeccable attention to detail and quality control
Must possess a strong mechanical aptitude and trouble shooting skills
Must possess the ability to multitask and direct others to accomplish tasks efficiently
Strong leadership skills
Must possess the ability to forecast brewhouse ingredient needs, staffing needs
Basic computer skills; Excel, Word etc.
Experience with EKOS is highly desirable
Forklift Certification and Ability to operate a Scissor Lift
Reliable attendance and a positive outlook and attitude
Must be 21+ years old
Have a valid driver’s license and clean record
Be able to lift 55lbs frequently and move up to 170lbs
Direct and Indirect Responsibilities:
Managerial:
Lead a team of 3-5 in all aspects of brewery operations
Brewhouse Scheduling and Break Management
Material and Ingredient Ordering
Ensure proper record keeping of all brewhouse activities
Be mindful of potential quality concerns
Act as a resource for brewer and taproom education
Champion a safe, inclusive, and fun culture within JRBC
Yeast management including harvesting, counting and pitching
Monitoring of fermentation with gravity checks and cell counts
Tank purging and transfers
Grain Handling and Organization
Dry hopping and adjunct additions
Carbonating beer for packaging
Checking DO and Co2 volumes using an Anton Paar C-Box
Keg washing and filling
Barrel filling, monitoring and extraction for packaging
General brewery cleaning
Packaging:
Operate DK MicroBottler bottling line
Ensure beer is carbonated to specification
Check and record TPO using an Anton Paar C-Box
Clean and fill kegs
Assist with weekly mobile canning
Quality Assurance:
Yeast viability and pitching rates
Gravity readings
DO measurements
Tasting panels and off flavor education
Inventory ingredients
Other:
Above all maintain a safe and inclusive work space
High levels of cleanliness and sanitation
Understand D.O, how it impacts your beer and how to reduce DO within the production process
Regularly and safely work around Chemicals, high voltage, flame and hot water
Maintain compliance with all brewery safety protocols
Navigate unpredictable tasks that arise on a day-to-day basis. We expect all our brewery employees to be willing to take on additional tasks and responsibilities as needed
